We craft this wine by vinifying each variety individually, a method that preserves and enhances their distinctive qualities.

Τhe resulting wines are then carefully blended to achieve greater complexity and balance, where the strengths of each component are harmoniously integrated.
This wine is pale lemon in colour with green reflections. The nose balances banana and pineapple like aromas with the refreshing green apple and pear whilst hints of herbal notes add complexity.
Balanced by Nature
On the palate, the wine is dry and well-balanced with a creamy texture and lively acidity. The finish is refreshing yet lingering, showcasing the best qualities of both varieties.
Served at 10–12°C, this complements a range of lighter fare, from the briny freshness of the sea to the gentle richness of poultry and the nuanced flavors of simple pasta preparations.

Vinification Method
Separate vinification of Moschofilero and Roditis, tailored to the unique requirements of each variety. After destemming the Moschofilero grapes, the flower must is lightly extracted in the press. The free-run must is then cooled before being racked and inoculated with a selected yeast strain. Low-temperature fermentation enhances the aromatic characteristics of Moschofilero. The same process is followed for the Roditis grapes and, after alcoholic fermentation, the blend is created.

The Story
Originating from Folegandros in the Aegean, our winemaker has spent every summer of his life on this beautiful Cycladic island. As a child, he experienced the unforgettable taste of vegetables grown locally, on terraces at Skales Varsamou, a stunning landscape that gave its name to this charismatic wine.
