The traditional wine of Folegandros Island. The grapes are traditionally sundried for 10 to 12 days prior to processing.

The concentrated must, rich of sugar and flavour, is incompletely fermented by indigenous yeasts. The produced sweet wine matures in clay amphora for 12 months prior to bottling.

The viscous taste, due to high residual sugar content, is integrated by acidity as well as complex flavours such as tobacco and ripe dried fruits, raisins and fig jam.
Mavrouka is served as a dessert or as an complement to light pastries.
