Satyr

Vinification Method

Οnce the assyrtiko grapes have been harvested and brought into the winery, they are destemmed, followed by brief maceration in the press to extract the free-run juice. The must is then cooled for the static settling process and inoculated with a selected yeast strain to ferment at low temperatures, so as to extract as much flavour as possible.

The Story

Satyr reflects our commitment to capturing the unique characteristics of assyrtiko, an extraordinary grape, and see how it behaves on the hills of ancient Elis. Our optimism in starting this as an experimentin 2015 seems to have been justified. In Greek mythology, a satyr is a dancer, a singer and a musician, a mischievous nature spirit – and the life of the party!
