Chardonnay Fumé Classic white vinification followed by 6-9 month lees maturation in French oak barrels of 2nd and 3rd use.

The wine is perfectly balanced between fruit and oak character. Citrus and stone fruits flavours are complemented by vanilla, espresso coffee and dry nuts nuances.
After destemming and gentle crushing, the grapes are given a 24-hour cold maceration. The flower must coming from the bleeding goes through static settling and inoculation with selected yeast strains.

Fermentation is conducted at low temperatures to enhance aroma and flavour.
Alatsaria is combined with fish carpaccio, fried and grilled fish, seafood, but also with white meats with white and lemon sauces, fava beans and pasta with seafood.

The Story
Every year, fishermen on the Cycladic island of Folegandros would sail to the southernmost cape of Ambeli Gulf, known as the Alatsaria Rock, to collect the salt crystals left by the sea spray that evaporatesall through the winter. Thissplendid wine is a tribute to that age-old custom.
