    A young wine of green-yellow colour and exceptional clarity. A bouquet of lemongrass on the nose, along with white-fleshed peach, green pear, and notes of melon. Boldly lemony in the mouth, with intensity and a citrus aftertaste. Served at 10–11℃, Satyr is the perfect companion for shellfish, grilled fish, as well as cheese croquettes, savoury cheese, or a flavourfull prosciutto.

    Paliomilos SatyrVinification Method

    Οnce the assyrtiko grapes have been harvested and brought into the winery, they are destemmed, followed by brief maceration in the press to extract the free-run juice. The must is then cooled for the static settling process and inoculated with a selected yeast strain to ferment at low temperatures, so as to extract as much flavour as possible.
